Dried fish is fish preserved by drying in the sun or open air until it is firm, lightweight and full of concentrated flavour. Used across African and Caribbean cooking, it adds deep, savoury, umami richness to soups and stews rather than being eaten on its own. Common kinds include panla, dried catfish and dried mackerel, and it differs from stockfish, which is dried cod. It is soaked and cleaned before use.
