Cho cho is a mild, pale green, pear shaped squash used across the Caribbean as an everyday vegetable, with a lightly ridged skin, a single soft seed, and a gentle, faintly sweet flavour. Raw it is crisp and watery, and cooked it turns soft and tender while soaking up the seasonings around it. It is the same squash known elsewhere as chayote or christophene, and it is boiled, steamed, stir fried and added to soups and rice and peas dinners.
