Browning sauce, or browning, is a dark brown, savoury liquid used in Caribbean cooking to give a rich, deep colour, and a subtle flavour, to dishes like brown stew chicken and fish, gravies, and black cake. It is traditionally made by slowly burning sugar until deep and bitter, then adding water, and is also sold ready-made. A little goes a long way, and in small amounts it is mostly about colour.
