Black eyed beans are small, cream coloured beans marked with a single black spot, the seeds of the cowpea plant. Mild and earthy with a soft, creamy texture, they are a staple across West African and Caribbean cooking, used for akara, moi moi, ewa, rice and peas and hearty stews. They cook quickly, do not always need soaking, and are naturally vegan and gluten free.
