Buljol is a Trinidadian salad of salted cod, or saltfish, that is soaked to draw out the salt, then flaked and tossed raw with chopped tomato, onion, sweet pepper, chilli and olive oil. It is bright, savoury and lightly spicy, served cool rather than cooked. Best known as a breakfast dish, it is eaten with fry bake or coconut bake, or with ground provisions.
