Black Cake
Pronounced blak kayk
Black cake is a rich, dark, dense Caribbean fruit cake made especially at Christmas and for weddings, the Caribbean cousin of the British Christmas cake. Its dried fruit is soaked in rum, and sometimes wine or cherry brandy, for weeks, months or longer, and browning, the caramelised sugar sauce, gives its deep dark colour. It is intensely moist and boozy, an adult celebration cake, often with more rum poured over after baking.
