Brown Stew Chicken
Pronounced brown styoo CHIK-in

Brown stew chicken is a Jamaican dish of chicken that is seasoned, seared until browned, and braised in a rich, dark, savoury gravy. Its deep colour comes from searing the chicken and often from browning, a sauce of caramelised sugar. It is built on thyme, allspice, scotch bonnet, garlic and onion, and is served with rice and peas or plain rice.
