Brown stew fish is a much loved Jamaican and Caribbean dish of fish that is first fried, then simmered in a rich, savoury brown sauce full of onions, peppers, tomatoes, thyme, garlic, scotch bonnet and seasonings. The fish, often a whole fish such as snapper, soaks up the deeply savoury, gently spicy flavour. It is classically eaten with rice and peas, plain rice, festival or ground provisions. As a fish dish, those with a seafood allergy should take care.
