Callaloo is both a leafy green and the dishes made from it, a staple across the Caribbean. In Jamaica it usually means amaranth greens steamed with onion, tomato and scotch bonnet as a side, while in Trinidad and the eastern Caribbean it means taro or dasheen leaves cooked with okra and coconut milk into a thick soup. The leaves are cooked down like spinach.
