Pounded Yam

Pounded yam is a smooth, soft, stretchy Nigerian swallow made from real yam that is boiled and pounded into an elastic, dough-like mound. It is eaten with rich soups such as egusi, ogbono and efo riro, torn off and used to scoop up the soup. Traditionally pounded by hand in a mortar and pestle, it is now often made quickly from yam flour, sold as poundo.
