Abula
Pronounced ah-BOO-lah

Abula is the classic Yoruba combination of soups eaten together over a swallow, most famously amala. It brings together gbegiri, a smooth soup of peeled beans, ewedu, a light green jute-leaf soup, and a red pepper stew with meat and fish, ladled side by side and mixed on the plate into one rich, savoury, multi-textured sauce. The word abula refers to this combination itself, a signature of Yoruba eating houses.
