Afang Soup
Pronounced AH-fang soup

Afang soup is a rich vegetable soup from the Efik and Ibibio people of southern Nigeria, made with two greens: finely shredded afang (okazi) leaves, which give it its name, and softer waterleaf. It is cooked with palm oil, ground crayfish, pepper and a generous mix of meat, fish and seafood such as periwinkles, and eaten with a swallow such as fufu or eba.
