Ayamase is a much loved Nigerian stew, a rich, smoky, spicy sauce made from blended green peppers and chillies with iru, the fermented locust beans, cooked in bleached palm oil for its signature smoky flavour and loaded with assorted meat and often boiled eggs. Also called ofada stew, ofada sauce or designer stew, it is the classic partner to ofada rice.
