Plantain is a large, starchy cooking banana that is always cooked rather than eaten raw. Firmer and less sweet than a dessert banana, its flavour shifts with ripeness, from starchy and savoury when green to soft and sweet when the skin turns black. It is fried, boiled, roasted or made into crisps across West and Central Africa, the Caribbean and Latin America.
