Garri
Pronounced GAH-ree

Garri is a dry, granular flour made from cassava, one of West Africa's most important staples. Cassava is peeled, grated, fermented and then fried or roasted into fine, slightly crunchy granules that keep for a long time. It is soaked in cold water as a quick meal, or stirred into hot water to make eba, a swallow eaten with soup. It comes as white garri and yellow garri, the latter made with palm oil.
