Method
How to make it
Step 1Mix Egusi paste
Stir ground Egusi with a little warm water to form a thick paste.
Step 2Fry Palm Oil & paste
Heat palm oil in a pot, add the egusi paste chunks, and fry gently until cooked through.
Step 3Simmer with protein
Add meat stock, cooked meats, ground crayfish, and cook for 20 minutes before adding greens.
Chef's tips
- Fry the Egusi paste chunks well to prevent them from dissolving entirely.
- Use fresh or frozen Ugwu for best colour.
